Banana-Avocado Bread

What do you do when you have an abundance of ripe avocado and banana? Combine them together to make banana avocado bread.

Well, I'm not too sure how this will turn out but basically use the avocado as kind of a butter substitute and use a basic banana bread recipe.  In theory it sounds good and a bit healthier too...but we shall see.

Ingredients:

3/4 cup sugar
2 tbsp butter (unsalted)
1 ripe avocado
1/4 cup applesauce
1 tsp vanilla extract
2 eggs
2-3 ripe bananas (mashed)
3 tbsp milk
2 cups flour
1 tsp baking soda
1/4 tsp salt

Preheat the oven to 350F. Cream butter, sugar, applesauce and avocado. Add vanilla extract, milk and eggs. Beat until well mixed.  With a spatula, mix in the mashed bananas.  In a separate bowl, mix together flour, baking soda and salt. Gently fold in the flour mixture to the wet ingredients and until fully combined.

Pour the mixture into a bread loaf pan or into muffin tins.  Bake for about 1 hour or until the top springs back when you press it.

 

*Verdict - they turned out quite nicely.  Can't taste the avocado but still moist and yummy.
