Mango Curry Chicken

I had a craving for curry but I wanted to do something different than my usual curry. We have a ton of mango so I figured, why not try putting some mango in the curry?  I do have to say, the dish did turn out yummy :)

Ingredients:
4 chicken thighs - deboned and cut into pieces
1 red bell pepper - cut into chunks
1/2 large onion - cut into chunks
curry powder
half can of coconut milk
1 mango - cut into chunks
1 cup water or broth
salt
sugar
cornstarch
oil

I marinated the chicken overnight with salt, sugar and curry powder. In a fry pan, saute the onion in oil until slightly translucent and add chicken.  When chicken is about half cooked, add water and turn down the heat to low - let the chicken simmer for a bit.  Add red peppers, mango and coconut milk.  Continue to simmer for about 5-10 min. Lastly, mix some cornstarch and water - add the mixture to the curry to help thicken the sauce.  Once the sauce has thickened, it's ready to be served over rice.

What's your usual curry? I usually use what's on hand, which is coconut milk, tomatoes, onions, red curry paste, and maybe some basil.

But, the mango sounds yummy!
