I had a craving for soup for lunch but didn't want canned soup. I looked into my fridge to see what was available and saw an onion and 4 tomatoes. Tomato soup it is!
Ingredients:
half of a medium onion - sliced
4 tomatoes - cut into chunks
olive oil
1/2 tsp dried basil
1/2 tsp dried thyme
1/2 tsp dried chopped bay leaves
1 can chicken broth
1 cup of milk
salt and pepper to taste
Saute the onion with dash of oil in pot. Add tomatoes and chicken broth. Let it simmer for a bit until tomatoes start to break up. Then add basil, thyme and bay leaves. Simmer for about 10 min. Puree the soup in a blender. Add puree back into the pot and add salt and pepper. Lastly add milk and stir. Continue to heat the soup but don't let it boil (heat for about another 5-10 min). Serve in bowl.

how do you manage to puree without the top exploding from the heat/pressure? I tried that once, and the top exploded, and I got hot soup all over the walls. FUN!
We use our vita mix...so far no problems what so ever :)
