Lemon Yogurt Muffin

I love Sunopta!  Sometimes I get really lucky and sometimes I don't with the deals there.  For those who don't know about Sunopta, it's a wholesaler that has weekly Saturday market in which they sell lots of organic food for super cheap.  Reason - usually most of the stuff are about to expire but not all the time.  Well, this past Saturday I went and picked up some Liberte yogurt for....$0.50!!!  The catch - about a week from expiry.  Still, generally those yogurt go for $5! The flavor I ended up getting was lemon.

Fast forward to today - still lots of yogurt left. So I decided to make a lemon yogurt muffin.  I basically found this recipe and adapted to what I have at home.

I used cake/pastry flour instead of all purpose flour.  Didn't have any lemon rind so I used some citron peel instead (from this Korean concentrate Citron drink).  Lemon juice - poured a lot in...didn't really measure but it was definitely more than a tbsp.  Added dried cranberries.  Did not make the lemon sauce/topping.

All in all, I think it turned out pretty good.  Yay, now I have some breakfast food that can last me for this week :)
