So I've been getting lazier and lazier...summer should mean more time to cook but instead I've been cooking less or making more instant food.
But I still ended up baking some thing - Lemon Bars. For those who know me, I am a huge fan of lemon dessert and the tarter the better.
Ingredients:
1 and 1/4 cup butter (softened)
2 Tbsp icing sugar
2 Tbsp sugar
a pinch of salt
1 and 1/4 cup flour
Preheat the oven to 350F. In a large bowl, cream butter with the sugars until light and fluffy. Add all the flour to butter and mix quickly with fingers until dough compacts into very large, loose crumbs with all the flour absorbed. Empty dough into a baking pan. Lightly and evenly press and pat dough into pan. Prick dough all over with a fork. Bake on center rack of oven for25 minutes or until dough is biscuit golden but not browned. Take out of oven to cool.
4 eggs
1 cup sugar
1/4 cup flour
2/3 cup lemon juice
some grated lemon rind (optional)
Mix together the flour and sugar. Whisk in lemon juice and lemon rind. Once fully mixed, add eggs one at a time. Pour mixture over the crust/baked dough. Bake for an additional 20 min or until lemon mixture has set. Take out of oven and sprinkle icing sugar on top. Allow it to chill in the fridge before serving.
Again, due to my laziness, no pictures. The bars were good...nice and tart :)
