It's been a while since I've blogged about my meals. I just haven't been home enough to cook lately. All this going out to eat (not that I'm complaining. hehe). Well, the other night I had a craving for mac n cheese. Unfortunately I only had about a handful of macaroni left so I decided to make it with spaghetti.
Ingredients:
spaghetti
1 can of evaporated milk (we ran out of regular milk at home)
about 3 tbsp of butter
1-2 tbsp of cornstarch
1-2 tsp of paprika
2-3 tsp of mustard powder
lots of grated cheese (we had jalapeno Havarti and cheddar/mozzarella)
Preheat oven to 350F. Cook the spaghetti separately. Don't cook it for too long...just enough that it's still a teensy bit raw/hard. In another pot, make a roux with butter, cornstarch, paprika and mustard powder. Then slowly add milk as you whisk to prevent clumps. Once the milk has thickened, add grated cheese. Finally add pasta, stir and scoop into a bake-able container (I used a pyrex glass pan). Top pasta with more grated cheese and bake in oven for about 15-20 min.
NOTE: need more liquid next time. I bit on the dry side...I would have liked it to be a bit saucier. Also, it's better with macaroni, shells, elbows, etc....just not noodles.
