Lemon Blueberry Tart

Our good friends, J & J, gave us a HUGE bag of blueberries over the weekend.  I wanted to make a simple dessert so I made a lemon tart with a twist - blueberries inside and out :)

Ingredients:


1/4 cup unsalted butter (melted)
1/2 cup sugar
1/2 cup to 3/4 cup lemon juice
3 eggs
tart shells
blueberries

In a bowl placed inside a double boiler, mix butter, sugar, lemon juice and eggs.  As the bowl heats up from the steam, whisk continually.  Once lemon curd has thickened, take it off the heat and put it aside.  In each tart shell, add about 5 blueberries.  Then spoon in lemon curd over the blueberries. Bake in a preheated oven of 375F for about 10-15 min. Remove from oven and garnish the top with more blueberries.
