Sunday morning breakfast - generally hubby is the one that usually makes breakfast but today, I decided I want to use up our blueberries by making pancake from scratch.
Ingredients:
1 cup all purpose flour
3 tsp baking powder
1/2 tsp salt
1 Tbsp sugar
1 egg
1 cup milk
3 Tbsp unsalted butter - melted
handful of fresh blueberries
Mix all the dry ingredients together. Form a well in the dry ingredient and add milk, egg and melted butter. Mix until smooth. Add a handful of blueberries and mix gently. On a pan over medium heat, pour or scoop about 1/4 cup of pancake mix and brown on one side before flipping. Once other side is browned, pancake can be served.
Have to say, this was much better than the batch I made last time :)
