As per request from hubby, he wanted to have some pork chops for dinner. Hence I decided to make baked pork chop on rice with whatever ingredients I had at home. Again, no measurements...did everything by sight. Didn't taste exactly like what it usually tastes like at a restaurant but it still turned out good and hubby loved it (which is what really matters in the end. hehe).
Ingredients:
Pork Chops
Garlic (a few cloves - minced)
Cooking wine
Soy Sauce
Chili Thai Sauce
Cornstarch
Tomato Paste
Onion (half large onion -sliced)
Ketchup
Ginger
Water
Rice
Egg (beaten)

I marinated the pork chops with garlic, cooking wine, soy sauce and chili Thai sauce for a few hours. Just before pan frying the pork chops, I coated them with cornstarch to seal in the moisture. I made a simple fried rice with 1 beaten egg, soy sauce and frozen veggies (contained peas, corn and carrots). With the rice done, I placed it in a pyrex container to bake later. In the same pan, I cooked the onions until translucent and set them over the rice. Then I pan fried the pork chops on high heat, searing both sides. I left the pork chops about half cooked before setting them aside on top of the rice. Then I made the sauce using tomato paste, ketchup, pork chop marinade, ginger and water. I placed the pork chops back into the pan to cook with the sauce. When the sauce simmered to a thick consistency, I placed the pork onto the rice and poured the sauce them. Lastly I sliced some cheese to place on top of the sauce covered pork chops. The only cheese we have at home is Jalapeno Havarti Cheese...kinda interesting and not the usual Mozzarella cheese one would use. Baked in the oven for 30 min at 375F.
