Earl Grey Shortbread Cookies with Lemon-Orange Curd

A coworker`s baby shower was coming up so I decided to make shortbread cookies.  I have been wanting to try out this recipe - Earl Grey Shortbread Cookies

This time I pretty much followed the recipe to the T as there really is no adjustment to be made.  

Lemon- Orange Curd

1 lemon
1 orange
topping up lemon/orange juice with bottled lemon juice to 3/4 cup
1 tbsp of lemon rind
3/4 cup of sugar
3 eggs
1/4 cup butter (melted)

Beat eggs and sugar together in a bowl.  I only had a steamer pot so I placed the steamer on top of a pot and placed bowl in the steamer - turned on stove to med heat.  Add melted butter and lemon/orange juice with the rind.  Stir continually until juice thickens.

I love lemon anything so it was hard to stop eating the lemon curd :)  My initial plan was to make shortbread sandwiches with the lemon curd in between but then I got lazy.  So I just told my coworkers to dip their cookies into the lemon curd.

tasted yummy! tho I think if I want more of an earl grey taste, I may steep a bit of the tea first.
