My husband always judges a restaurant by its mashed potato. He says if a restaurant can't even make decent mashed potato, how can you expect it to make a decent meal? Personally I don't agree with him but hey, to each his own. Don't get me wrong, I love mashed potato but I don't judge a restaurant based on that. Well, I'm glad I'm not exactly a "restaurant" as I like to make mashed potato from scratch whenever I have the time and it's not blow-your-mind-amazing, but I think it's still pretty good :)
Ingredients:
8 small russet potatoes (prbly equivalent to 3 big ones)
1/4 cup milk
4 oz cream cheese
seasoning salt
dill weed
Boil the potatoes in water until soft - drain water and peel skin. In the same pot, add milk and mash the skinless potato. Mix in cream cheese, seasoning salt and dill weed.
*I've made variations to this simple recipe - depends on my mood of what I want it to taste like. You can add herbs, garlic powder or just leave it plain without any seasoning other than salt.
