Mustard Glazed Carrots

Hubby bought a 5lb bag of carrots....guess it's carrots for this week's veggies.  There's only so much carrots I can eat hence had to think of some creative way of making it other than raw sticks or carrot soup.

Ingredients:
6 carrots - peeled and sliced diagonally
2-3 Tbsp water
2 Tbsp butter
2 Tbsp dijon mustard
1-2 Tbsp honey
fresh chopped parsley
salt
chili pepper powder

In a pan, add water, butter and carrots - cover with lid and let it simmer in med heat to soften the carrots. Remove lid after approx 5 min and add mustard, honey.  Continue to simmer without lid. Add parsley, chili pepper and salt for taste. Heat over med-low heat, stirring constantly until thoroughly glazed.
