My coworker mentioned to me the other day that her aunt marinates her chicken wings with coke and it was super good. Well, that certainly intrigued me so today I decided to try that out. Unfortunately I didn't have any regular coke at home so I used what we have - vanilla coke.
Ingredients:
a bag of chicken wings (about 1-2 lbs)
1 cup vanilla coke
3-4 tbsp soy sauce
1-1.5 tsp ginger powder (no fresh ginger at home)
2 tbsp cooking wine
3 carrots - chopped into small pieces
fresh ground black pepper and salt for taste
Marinate the wings in soy sauce, coke, ginger powder and cooking wine. Heat a large non-stick pan over medium heat and add chicken wings - sear both sides. Add the marinade and carrots to the pan. Simmer the chicken wings for 15-20 min - do not cover with lid. Marinade will be reduced to a glaze. Add some black pepper and salt for taste (if necessary) and serve.
